|Produced from Moscato Bianco Canelli sourced from various estate vineyards in the village of Castiglione Tinella in the Cuneo province of Piedmont. Fermentation takes place in special pressurized tanks. After roughly a week of fermentation, when the wine has reached the proper balance of alcohol, sugar and acidity, it is chilled down and fermentation is arrested. The wine then goes through a sterile filtration to eliminate the yeast, and is bottled cold. To insure freshness the wine is fermented one tank at a time, 12 months a year.
|The village of Castiglione Tinella, where Saracco is located, is between Alba and
Santo Stefano Belbo – two of Piedmont’s most famous wine towns. Luigi Saracco,
the great-grandfather of winemaker Paolo Saracco, began growing Moscato
grapes in the early 1900s. Paolo grew up in the vineyards and even at an early
age he had a desire to make a wine using his family’s name. Upon completion of
his enological studies, he began experimenting with new winemaking techniques
and modern vineyard management. The Saracco family’s vineyards are in an ideal
microclimate for the Moscato grape – the soil is limestone mixed with sandy veins and the elevation provides just
the right temperature and humidity balance. Careful vineyard management and strict control over the winemaking
process contribute to Saracco’s consistently excellent results and his reputation as the King of Moscato.
